Follow these instructions to cook a great risotto!

  1. Add 4 cups of water and a handful of salt
  2. Put the rice inside (more or less 1 cup of rice for each person)
  3. Stir the rice and salt as the water is heating up till it’s boiling
  4. Within 5/10 minutes, water will be almost absorbed
  5. Taste the rice, if it’s uncooked yet and there’s not enough water, add a bit of water again (if you like it, try simmering a bit with white wine)

Once cooled add

  • melon,
  • olives,
  • tomatoes,
  • artichokes,
  • zucchini,
  • cappers,
  • parsley,
  • rosemary
  • a touch of basil.
